Methi Malai Paneer: Restaurant-Style Recipe

For the paste
1) Take a non-stick pan and heat the oil. Add cumin seeds and saute for few seconds on medium flame.
2) Then add onions, garlic, ginger and green chillies. Saute them for around 2 minutes on medium flame.
3) Then add cashew nuts and tomatoes. Mix well and continue to cook for 2 more minutes. Then leave it aside to cool down.
4) Then blend into the smooth paste using 2 tablespoons of water.
Final process
1) In a non-stick kadhai heat the oil, then add cardamom, cinnamon, bay leaf, clove and saute them for a few seconds on medium flame.
2) Then add methi leaves and saute for a minute more.
3) Then add chilli powder, turmeric powder, coriander powder and water (2 tablespoons) and continue to saute for few seconds.
4) Time to add the prepared paste. Give a good mix and cook for 3-4 minutes more. Stir occasionally.
5) Then add paneer and give a gentle mix.
6) Cook for a minute and add garam masala and fresh cream and further cook for a minute.
7) Methi malai paneer is ready. Serve with grated paneer.

- Oil - 2 tablespoons
- Cinnamon stick - 1 small
- Elaichi - 1
- Clove - 1

- Coriander powder - ½ teaspoon
- Milk - ½ cup
- Sugar - ½ teaspoon
- Fresh cream - ¼ cup
- Garam masala - ½ teaspoon
