Ingredients for Jain-style Red Coconut Chutney:
- chana dal — six tsp
- dry red chili — ten
- lemon juice — one tsp
- water as needed
- chopped tomato — one
- grated coconut — one cup
- salt as needed
- black pepper as needed
For Tempering:
- mustard seeds — one tsp
- curry leaves — 15
- Asafoetida — one pinch
- cumin seeds — one tsp
- refined oil — two tsp
- Ghee — two tbsp
How to prepare Jain-style Red Coconut Chutney:
Step 1) To begin with, take a non-stick vessel & dry roast broken red chillies till they splutter. Now, drop chana dal & dry roast in for a few mins.
Step 2) Then, drop grated coconut and chopped tomatoes. Combine them & cook till tomatoes are smooth & tender. Season with black pepper and salt. Mix properly & cook for one more mins.
Step 3) Detach from the burner & allow it to cool for around 8–10 mins. Now, pour lemon juice & mix it properly while adding little quantity of water.
Step 4) Place the mixture to a blender jar & blend properly to prepare a fine puree. Now, heat oil into a non-stick vessel & once the oil is sufficiently hot, drop mustard seeds into it & let them splutter.
Step 5) Now, include urad dal & cook it till golden brown in the colour. Then, drop asafoetida, cumin seeds & curry leaves and cook for a while. Combine it properly & pout this tempering on the blended puree.
Step 6) Combine the puree properly to incorporate the tempering properly with the puree. Put the chutney to a vessel & have it along with roti, bread or paratha of your liking.
